Project Description

The main objective of the study is to identify suitable and reliable molecular biology techniques for the detection of food allergens. The two molecular biology techniques tested are Enzyme Linked ImmunoSorbent Assay (ELISA) and Polymerase Chain Reaction (PCR). These techniques will be used to evaluate a number of food allergens.

The methodology will subsequently be utilized by (a) FA Food Allergens Lab enabling them to provided reliable testing services to industries in Cyprus, the Middle East and EU countries, (b) the General Chemical State laboratory which will utilize the testing for official use by the government and (c) by UNRF which will utilize the testing for research relating to food testing as well as for the training of students with the use of new methodologies in food testing.
