WHISKY SELECTION

Whisky, also known as whiskey in Ireland and the USA, is a distilled spirit that is made from fermented grain mash. The grains used can include barley, corn, rye, and wheat. The production process and aging give whisky its distinct flavor. The drink is strongly associated with Scotland, Ireland, and the USA, each having a unique take on the classic spirit.

SCOTTISH WHISKY (SCOTCH)
Scotch is made in Scotland and aged in oak barrels for at least three years. There are several types of Scotch whisky, including Single Malt, Blended Malt, Single Grain, and Blended Grain Whisky. The taste of Scotch can vary greatly depending on the region where it is made. For example, Scotch from Islay is known for its smoky, peaty flavor, while Highland Scotch tends to be lighter and fruitier.

IRISH WHISKEY
Irish whiskey is made in Ireland and aged in wooden casks for a period of no less than three years. Although some Irish whiskies are peated, most are not, giving them a smoother finish than Scotch whisky. There are several types of Irish whiskey, including Single Malt, Single Pot Still, and Blended Whiskey.

AMERICAN WHISKEY
The two most popular types of American whiskey are Bourbon and Tennessee whiskey. Bourbon, made primarily in Kentucky, must be made from 51% corn and aged in new charred oak barrels. Tennessee whiskey is similar to bourbon in its composition, but it undergoes an additional filtering process known as the Lincoln County Process, which gives it a distinct, smoother taste. There’s also Rye whiskey, known for its spicy, rich flavor.

Each type of whisky offers a unique taste profile and experience, influenced by factors such as the ingredients used, the distillation process, the aging process, and the region in which it’s made.

TEQUILA SELECTION

Tequila is a distilled spirit made primarily from the blue agave plant, native to the region surrounding the city of Tequila in the Mexican state of Jalisco. The unique volcanic soil in this region is ideal for growing blue agave, and by Mexican law, tequila can only be produced in this region. Tequila comes in several types, each offering a unique taste profile.

BLANCO (SILVER OR WHITE)
This is tequila in its purest form. It is clear and typically unaged, where the true flavors of the blue agave are present, along with natural sweetness. It can be bottled immediately after distillation or stored in stainless steel tanks for up to 4 weeks.

REPOSADO (RESTED)
This tequila is aged in wood barrels (usually American oak) for a period of 2 months to 1 year. The aging process gives Reposado a mellow oak flavor combined with the flavor of the blue agave. It’s smoother and more complex than Blanco.

AÑEJO (AGED OR VINTAGE)
Añejo is aged in small barrels for a minimum of 1 year and up to 3 years. The aging process darkens the tequila to an amber color and the flavor becomes smoother, richer, and more complex.

EXTRA AÑEJO (EXTRA AGED OR ULTRA AGED)
This is a relatively new category, established in 2006. Extra Añejo tequila is aged for a minimum of 3 years. This extended aging process creates a tequila with a mahogany color and a taste profile that’s incredibly smooth, rich, and complex.
